Bell Pepper and Bean Burritos

These burritos are ideal for power days when you’ve got lots of exercise,
work, and running around to do. Packed with fiber and protein from beans
and eggs, and the sweetness of softened bell peppers. Fresh cilantro and
red chili offer a hit of fresh flavor and bright color.
Serves: 4 burritos (1 burrito is 1 serving)
Container: 4 single-serve airtight containers, or 1 large one to store all 4
burritos

Ingredients:
2 garlic cloves, finely chopped
2 red bell peppers, finely sliced
1 tsp. paprika
½ tsp. chili powder
1 can (14 oz.) black beans, drained
Salt and pepper, to taste
2 eggs, lightly beaten
4 small flour or corn tortillas
Fresh cilantro, chopped
½ fresh red chili, finely chopped
Method:
1. Drizzle some olive oil into a frying pan and place over a mediumheat.
2. Add the garlic, bell peppers, paprika, and chili powder, sauté
until the bell peppers are soft.
3. Add the black beans and a pinch of salt and pepper, stir to
combine, continue to sauté.
4. Push the bean and bell pepper mixture to one side of the pan and
pour the lightly beaten eggs on the other side, stir them as they
scramble until just cooked.
5. Turn off the heat and lay your tortillas onto a board.
6. Fill each tortilla with bell pepper, beans, and eggs.
7. Sprinkle with cilantro and fresh chili, and tightly wrap.
8. Carefully place the burritos into your container/s, cover, and
place into the fridge. These pies are SO light in calories, you can have them as a snack on the
side of a more robust breakfast. They are a great way to get extra protein
and a dose of greens in the morning. The feta cheese adds creaminess and
a tart saltiness to satisfy your taste buds.
Serves: 1 large pie to be cut into 8 pieces (8 servings)
Container: store in the fridge in a large airtight container with baking paper
to separate the layers of pie slices so they don’t stick together

Ingredients:
5 eggs2 cups chopped spinach
1 cup sliced mushrooms (any kind)
2 oz. feta cheese, cut into small pieces, or crumbled
Salt and pepper, to taste
Method:
1. Preheat the oven to 356 degrees Fahrenheit and grease arectangular pie or casserole dish with butter.
2. Place the eggs, spinach, mushrooms, feta, salt, and pepper into a
bowl and whisk to combine.
3. Pour the mixture into the greased dish and place into the oven to
bake for about 10 minutes until just set.
4. Leave to cool before slicing into 8 pieces and placing into an
airtight container.
5. Store in the fridge.
